I Finally Made My First Batch at Home and Here’s the Recipe!

Yes, you eat them WITH THE SHELLS ON (though it’s not mandatory).

I had my first batch of boiled peanuts on a high school road trip, stopping for gas (and fireworks) off I-95 in South Carolina. The proprietor had a kettle going and asked if we’d like to try some “BALD PEANUTS”. He had to repeat himself four times before we finally understood he was offering us “boiled peanuts”. We got some and they were terrific and, since then, I’ve had boiled peanuts at every opportunity.

And there have been ALMOST NO OPPORTUNITIES. These are hard to come by. They’re often made on-site at roadside stands, gas stations, etc., and they aren’t sold on shelves — at least outside of the South.

There is, however, a recently-introduced brand of shelf-stable boiled peanuts you should try if you see them! I had them at the Fancy Food Show in Jan. and they’re great.

I finally decided it was time to make my own. A friend recommended using the recipe created by the renowned Southern chefs The Lee Bros.  It’s available online:

I made sure to buy RAW peanuts, not dry-roasted or anything, and found those on Amazon. The recipe was easy to follow though it took a LONG time. Per the instructions, I wanted them soft so I boiled them for twelve hours and, even then, they still had a good crunch to them. Whether or not you opt to eat them with the shells on (I do), the peanuts inside are DELICIOUS.
