Have You Seen the Remarkable New Pasta Shapes?

One of These is My Favorite Pasta EVER!

Dan Pashman sent me a box of his new pasta shapes and I have to tell you about them!

Dan is a three-time James Beard Award winner and creator and host of “TheSporkful” food podcast and, working with the artisans of Sfoglini, he created these three NEW PASTA SHAPES.

All three sauces were created to maximize these three qualities:

*SAUCEABILITY: How readily sauce adheres to the shape

*FORKABILITY: How easy it is to get the shape on your fork

*TOOTHSINKABILITY: How satisfying it is to sink your teeth into it

I tried them all (see photos) like this:

CASCATELLI is Italian for “waterfall” and it’s a curved, half-tube shape with ruffles.  I made this with my favorite meat sauce and lasagna filling from AllRecipes.com

VESUVIO is named after the spiraling contours of Mount Vesuvius with ridges and a spiral shape for the sauce to cling to. For this I used a terrific pomodoro sauce made for me by a local friend. And finally…

QUATTROTINI has four ridged tubes around an octagon middle and it is hearty! This one was tried with an NYT Bolognese Sauce from Marcella Hazan (gift link!)

All of these were absolutely excellent and my favorite was the Cascatelli which is now probably my favorite all-time pasta.
